Need Nether Stars for Beacons but killing the wither scares you?
IMPORTANT! DO NOIT USE KNOCKBACK ON SWORD.
Use one of the tricks in this tutorial to kill the Wither Boss and claim your Nether Star.

These work in Minecraft 1.16 too! Very little damage taken. I do it without armour in the video and survived every time. (Almost!)
